looking over my MK manuals and I noticed that the Mortal Kombat Series from Midway added a extra "jumper" wire between the Ground and the other ground (AC ground?) (see pic)
I am wondering why this is done? I just booted up my MK1 WITHOUT the jumper and it works fine??

The output ground is isolated from input (field) ground. This just ties the two together, which is what you want for your application. (sometimes the output ground isn't really ground at all but is a floating ground)

Would it be correct to say that this arcade doesn't have an isolation transformer and that it's floating ground is connected to earth ground on the assumption that it's a three-pronged, grounded plug? And that in a situation where there wasn't an earth ground, then they would float the ground and use an isolation transformer? Just wondering if that's what's happening here?

I have installed the jumper and am going to be wiring the CP and coin door for the next hour or 2. I will not power it up until I check back here to be sure that the jumper will not cause problems. (If I fry any of my MK's or my SFA2 I am gonna be PISSED!)

Hey Wayne... Yeah in this situation if it's an older monitor I would think there would be an iso xformer installed in the cab as well as the switcher. (seeing as the FG has been tied to EG)

the only components I see in the cab are Monitor and Power supply, (& JAMMA harness and PCB's of course)
Is this isolation transformer a must? and in "easy terms" what is its purpose?

If it's a newer style of monitor in the cab, which it could very well be, an iso-xformer would not be required.
Basicially it's a large transformer in the cab specifically for the monitor power, as it isolates it from everything else in the game.

understood. as far as i can tell the monitor is powered directly form the PS.
