I now have this Joust Cocktail up and running (Many Thanks to Tanman!!) and after looking it over, I am wondering what the joysticks should be in this game?? I think just a left or right? Is this correct?? There are 4 switch joysticks in there (I believe 8 way), but doesn't the joystick just move left and right with any up or down being controlled by the Flap buttons?? Man, It has been so long since I played, I just don't remember.

If I am right with the 2 way Joystick, where is the best place to get them??

It is indeed a two-way.

Arcadeshop has repro shafst and balls, but I can't think of anywhere that has full sticks.

I thought the cocktails have a different assembly than the uprights?  They were smaller, to fit into the limited space.  The sticks were also smaller.  No idea if anyone reproduced the cocktail versions (even though the uprights are easy to find).

Yes, I believe that is indeed the case...

I too have heard that the cocktail stick assemblies were smaller to fit in the narrow CP.

To my knowledge, the Defender sticks are the same on the Joust, Stargate and Moon Patrol uprights.
