Frosted are like the "condom" covered bulbs equipped stock on pins.
the angles refer to the angle that the light shines out form the LED... think viewing angle on a Television (if that makes sense)
I like wide angle for inserts. Wide angle or the 5 LED style I linked above for G.I. and frosted for any place a condom bulb was used stock

In most situations: playtfield inserts, GI, etc. wide angle seems to work best. Narrow angle are for small inserts, or in the case of some new Stern games, on the top of pop bumpers. Also, for exposed bulbs on some playfield toys they might look kinda cool.
For large inserts, I like the multi LEDs with 4 or 5 LEDs in one, dispersed at a wide angle.
Flashers, which replace #89 or #906 lamps look just like actual flash bulbs or strobes.
I agree with Brock that warm white looks best for most GI lighting. An exception is where you want a high tech look, as the cold white looks bluish.
Also, dont use regular LED's where you have any lights that dim as they will pulse and look terrible. There are LEDs sold by some European companuies that have a small capacitor built in the bulb and can smooth out the pulse. They are pretty expensive.
Toward the red end of the spectrum, lighting inserts with same colour bulbs will look darker than you might want. On the other hand, toward the blue end, they are a huge enhancement and very bright. For red, orange and some yellow inserts, I use a white bulb.
Best thing is if you know what you are doing, the machines don't have to look any different with LEDs. They run cooler, draw considerably less power and locked on lamps won't burn anything.

I was thinking of using the whites in my Slugfest which has GI that stays on all the the time. I'm not sure if the white would be too stark or not. I find the LED's light harsh to look at in certain situations(especially the white). Maybe I'll buy a couple of each in different colors and try them out that way. I think it comes down to a personal taste whether you want to use the old style lighting or LEDS. I do like the fact that LEDS are near '0' maintenance.
Bright white wide angle LEDs under the playfield will definitely help Slugfest, the running man and some of the outfield inserts nearly require it on this game.
