Buy something you like to play and keep in mind that you will want to get different games eventually.
Depending on your budget, TZ and STTNG are 2 good candidates IMO. They are, with Guns n'Roses, the games i kept for the longest time and i have no plans to sell them in a short future.
TZ: looks weird at first, you may not like it if you try it at someone else place but once its home, it keep growing on you to a point where you UNDERSTAND why its so highly rated STTNG: its nice and great fun to play and its still very cheap. Probably one if not the best game for the price. Lots of modes, hard to reach wizard mode, you will be comming for more !
WARNING, like others mentionned before, they are not easy games and people who just want to flip will not like them (often called "the family") To a player point of view thou, they are hard enough so you wont get bored of them very quickly. Also on a positive note, once you're bored, they will be easy to sell, they are both relatively sought after.

Shadow and Demolition Man, Because they both give you good bang for the Buck and because I know a place you can get them both tomorrow!!

I'd recommend games that you can get locally. It's always better to check something out in person prior to buying... Nothing kills hobbie desires quicker than dropping a lot of cash on a long distance dud or something that you get bored of quickly.
You should go see what pins only and hardkor have to offer... Well that's what I'd do anyways.

I do not want to own a pinball just to own a pinball. I am hoping to purchase 2 machines that:
a) will not get easily bored of b) will look reasonably "cool" in my living room / dining room

I went to Southern today just to check out and play a few new machines. They had Shadow there and I really should have taken it for a spin. I have not played Goldeneye either. I'd gladly take one off of your hands but you would have to sell me IJ as the second. C'mon you can easily get another one for cheaper and shop it yourself. Perhaps that's what you need to rekindle your love for Indy?
There are a lot of great pins out there and all I can suggest is to go out there and try a bunch and see what you like. If you find something you like, try to have a collector to give it the once over for you because if you don't really know what to look for you might be in for a few surprises.
Sounds like money isn't that much of an issue from your posts so I would recommend a Bally/Williams 90's DMD title, lots of great games here and possibly a new Stern and here I would suggest POTC, Family Guy, Spiderman, TSPP, or LOR. (Nothing compares to getting a brand new pinball or something close to it - unless it's (one of)your grail machine of course). It all boils down to personal taste so get out there and do the legwork. Try as many of the newer DMD games as possible and see what turns up in the process. I would suggest buying locally first so you can try it first hand and have an opportunity to look it over, inside and out.

Stop and go strategy play, and just plain go. Doesn't mean NF is a favorite title. It just means with two I would want contrast.

Have you played either of these titles? Both are great. MM, of course, has tons of followers. I have been fortunate enough to have some time on a Ripley's and it's a surprisingly good game. I really cann't understand what's not to like. Great layout, complex rules (hell, I still don't understand it), great modes, multiball, etc.

Yeah as for games to never want... there is a hell of a long lineup of shitty games below RBION and MM. I don't see any reason to make such a statement. Well except the one is a Stern.

TSPP is a great game and one you will never bore of. I've had two IJs. It's a good game, but I'm not sure it's a great game. There are a few things, that after awhile of playing, start to become annoying:
1. Too many modes. Yep, I said it. There are simply too many damn modes to get to the wizard mode. Normally that wouldn't be a problem but... 2. No stacking. You cann't stack the modes, so you have to hammer through each and everyone one. I love being able to stack modes (TZ, TSPP, LOTR, for example allow two or more modes to run at the same time). Stacking introduces more strategy into a game and provides some real fun scenarios. 3. MB is very, very lucrative and a relatively safe way to get points. If you can hit the ramps, and the centre targets, go for MB over and over.
In spite of the above, I think it is a fun game. I know it wouldn't work for me in a 2 game collection.
If you like Sterns go for TSPP and LOTR. Get them HUO and they will be in amazing shape.
If you like Williams, I'd probably do TZ and ST:TNG. Best bang for the buck.
If money is no object, LOTR and MM although both are fast, flowing games, you will never tire of them.
In the end it doesn't matter....you won't stop at 2....no one ever does .
