Almost any solid state machine made pre-1980 did not have multi-ball, so there's 176 titles (according to the IPDB) to start with. After Firepower, which was the first solid state machine with multi-ball, there were many more made that don't have multi-ball. Too many to list, really, which is probably why nobody is answering your question. Even a couple of System 11's had no multi-ball, like Bad Cats, I believe. And I think there was a DMD machine or two that didn't have multi-ball, although I can't say that for certain.
I think you might have trouble finding people that want to offer information regarding your project because the prospect of someone butchering 3 machines likely sickens most pinball hobbyists. Unless you find 3 of the same machine that are all beyond repair (and *everything* is repairable, really), I would rather see those machines fixed up and playable again than see some kind of funky hybrid thing.
My guess is that you'd be further ahead to build from scratch or commission someone to build the playfield and components for you. What type of hardware will this system be running on? Homebrew equipment or pre-existing pinball hardware & software?

I think the easiest machine would be to find that is single ball is Alien Poker and that machine does not find much love and can normally be found for cheap.
Life is like Pinball!! You never know where you will bounce or where your going but sometimes you have that one amazing shot But on the other hand you have those darn gutter ball where you just get frustrated.
Correct. However, it is a widebody game (bigger than regular machine)
