After hitting any of the four drop targets on my Eight Ball Deluxe, the points do not just register once, but continue to register until the ball is drained. While I don't mind scoring millions of points for hitting one target, it's just "not right" . It just started doing this. Any advice on where to look first ? Thanks.

Or maybe just a burned coil (the one that lifts the targets back up). This happened to me once on my Joust and a bad coil was the problem. Try oiling them a little.
Yep, most probably a dirty or misadjusted switch behind at least one of the drop targets. Clean with a business card. Do not use sand paper on these gold-plated contacts.

Well...I cleaned the contacts. That didn't cure the problem. Upon investigating, I have discovered that when any of the first 3 targets are knocked down, the points continue to rack up. However, as soon as the 4th ( last) target is knocked down, the points stop. Anybody have another idea ?
This issue is definitely usually caused by a dirty or poorly adjusted contact behind one of the drop targets. Or by a bad/leaky capacitor, when present.
By how many points is the score increasing when the trouble is occuring? Once in that mode with only the first in-line drop target down, go into diagnostic:switch test, and identify which switch is detected closed. Hopefully there will be another number showing instead of only the expected switch 01. These observations should help identifying which switch is detected closed.
Finally, a leaky cap across a switch could do this problem. There is supposed to be a capacitor across the switch on the back target at the end of the in-line drops, according to the manual. You can try to clip one end and see if the issue is still occuring. Replace the cap by a fresh 0.05 uF if deemed defective.

The score goes up by 50K and does so very quickly. I have discovered that the scores goes up now even if no targets are hit. The problem seems to be the bank shot switch at the very back of the 4 drop targets. The diagnostics have pointed to switch #5 a couple of times and that is the bank shot switch. The switch is not physically on, so it might be the cap as you suggested. I guess I will try the suggestion of cutting the cap lead to see if that fixes the problem, unless there is another course of action I should take first ?
